Hello

I have a crystal grey interior on my A class and it just keeps getting dirty. I use wipes but sometimes it won’t help cleaning properly. Need help!!

try DrLeather wipes mate, I have oyster in the BM and they clean off all transfer without problems, stink mind you but do the job
Now moved on to an M235i M Performance convertible DMS map 411bhp / 590nm torque

What about putting a protective coating on it so that it should just wipe clean easy enough afterwards?

I would look at getting it properly cleaned and then as suggested above a coating of some description so that any further dirt and jean transfer removes off easily. Not the best things to keep clean.
